My frozen veggies turn out mushy?

We grow green beans and peas that when we thaw them out they are always mushy, we blanch them the way you're supposed then we spread them on a tray and put them in the deep freeze, but when we thaw them they are always crap. Is there anything that we can do to make them come out better?
